A little more about me…

Hi! I’m Kelly, and that’s Quentin! I’ve had a sweet tooth for as long as I can remember, and my favorite food is chocolate. My second favorite food is honey. So, if you bring me some honey chocolate, we are guaranteed to be best friends (side note: check out this list for my top five honey chocolates).

My sweet tooth took a major hit six years ago when I started a rigorous diet called the Specific Carbohydrate Diet (SCD). The SCD eliminates all refined sugar. No cheat days. No 80-20 approach. 100% commitment.

The only sweetener allowed is honey. Since I LOVE dessert, I quickly delved into the world of all things honey that were legal on the SCD.

This blog is my ongoing collection of recipes. It contains the best of the best! Tried and true. Delicious even for those who still eat sugar—I promise.

Why do I follow the Specific Carbohydrate Diet?

In 2007, while in my final year of high school, I was diagnosed with Crohn’s disease. Then in 2015, after my disease continued to worsen, and with doctors advising me to start very serious medications and prepare for potential surgery, I decided to do some research.

For years doctors had told me that my diet had no impact on my Crohn’s disease. However, more research was starting to surface claiming the opposite: diet has everything to do with Crohn’s disease and can be a major tool to manage your symptoms and even gain control over inflammation in your body.

I found the Specific Carbohydrate Diet through Breaking the Vicious Cycle and decided to give it a try. SCD eliminates all complex carbohydrates, including refined sugars, grains and gluten.

It begins with an introduction phase that is a combination of a strict elimination diet meeting baby food…yeah, not super fun. While it wasn’t easy, I was able to stop all of my symptoms, come off all medication, and slowly regain my health.

I have been following the SCD diet for over six years and have been symptom-free and medication-free the entire time. Interestingly, during the past six years, even more research has surfaced exploring the link between diet, gut bacteria, and Crohn’s disease—showing the clear link between them all. Check out the great work being done at NIMBAL and Dr. David Suskind from Seattle Children’s Hospital for a glimpse into this world.

Also, during this time, diets like the Paleo diet have exploded in popularity, which has helped to generate more readily available gluten-free and refined-sugar-free items at the grocery store.

This is an ongoing journey of managing a chronic disease, healthy eating AND still satisfying my sweet tooth!
